First, take butter or margarine out of the refrigerator and soften. Next, add the butter, brown sugar, egg yolk, flaxseed meal, and vanilla and beat until light.
Next, gradually add your flour to the bowl and blend with a hand or stand mixer.
Then, when all is mixed, refrigerate for 20-30 minutes in a covered bowl.
Making the Thumbprint Cookies
First, Preheat the oven to 375. Then, remove from the refrigerator and make small balls, roll in beaten egg white, and roll into the smashed walnuts. Place them on a cookie sheet or a mini muffin pan and press your thumbprint in the center to make a well for your jam.
Then, bake for 5 minutes, remove and cool for 10-15 minutes, THEN ADD YOUR JAM, and bake an additional 7 minutes.
