These Skinny Pumpkin Chocolate Caramel Cookies are bites of Gooey, Chewy, and DELICIOUSNESS!!!! I am making these as my Semi-Guiltless Treat tonight for the Chicago Bears/Rams Showdown………GO BEARS!!!!!!
Skinny Pumpkin Chocolate Caramel Cookies
Ingredients
- 1 Cup Sifted Whole Wheat Flour
- 3/4 Cup White Flour
- 1/4 plus 1/8th Cup Truvia
- 1/4 Cup Brown Sugar
- 1/4 Cup plus 2 Tablespoons Smart Balance Cholesterol Free Oil with Omega 3 Healthy Butter substitute with Omega 3's.
- 1 Teaspoon Flaxseed Meal Flax's primary healthy benefit is due to the omega-3 essential fatty acids, "good" fats that have been shown to have heart-healthy effects.
- 1/2 Cup Canned Pumpkin Puree Pumpkin is high in fiber which can reduce LDL's, bad cholesterol.
- 1 Egg Yolk
- 1/2 Teaspoon Baking Soda
- 1/2 Teaspoon Baking Powder
- 1 Teaspoon Organic Honey The Antioxidants in It Are Linked to Other Beneficial Effects on Heart Health. Again, honey is a rich source of phenols and other antioxidant compounds. Many of these have been linked to a reduced risk of heart disease
- 1 Package Rolos
- 1 Package Dark Chocolate Dove Candy with Sea Salted Caramel
- 1/2 Teaspoon Sea Salt
- 1 Teaspoon Ground Cinnamon It can lower blood sugar levels, reduce heart disease risk factors and has a plethora of other impressive health benefits
- 2 Teaspoons Organic Vanilla Extract
Instructions
- First, in a bowl, add your pumpkin, oil, vanilla, egg yolk, truvia, brown sugar, honey, and blend with a hand mixer.
- Next, add flour, baking soda and powder, cinnamon, flaxseed meal, salt and stir.
- Gradually add flour mixture to the wet ingredients and mix.
Making The Pumpkin Balls
- First, line a cooking sheet with parchment paper. Next, scoop heaping tablespoons of the batter onto a cookie sheet. This recipe makes between 18-20 cookies then preheat the oven to 350.
- Put the cookie sheet in the refrigerator for a least 30 minutes. Next, take the batter, roll into a ball and stuff the Rolo or Dove candy into the cookie and roll until the dough covers the candy.
- Bake 12-15 minutes and serve....these cookies are healthier, delicious, and delightfully gooey.....Enjoy!!!
