Easy Chicken Gyro With Eggplant (or Not)
Ingredients
Lemon Pepper Chicken
- 2 Tablespoons Felippo Berio Olive Oil Olive oil is an excellent fat that helps lower bad cholesterol, LDL's
- 1 Lb. Organic Chicken Breast
- 2-3 Tablespoons Lemon Pepper Seasoning http://www.basinblend.com or Mrs. Dash
- 1/2 Teaspoon Garlic salt

- 1/4 Teaspoon Lemon Zest

Tzatziki Sauce

Pita and condiments

Baked Eggplant

Instructions
Eggplant
- Preheat the oven to 350
- Slice the eggplant in thin slices.
- Next, brush eggplant slices on both sides with olive oil, add a dash of salt and pepper, and place them on a cookie sheet .
- Bake 15 minutes, flip eggplant, and bake an additional 5-7 minutes.
Lemon Pepper Chicken
- First, in a bowl, add olive oil, lemon pepper seasoning, oregano, and dash of garlic salt, lemon juice and lemon zest.
- Next, add chicken to the bowl and coat and marinate for 30 minutes in the refrigerator.
- Lastly, sauté chicken over medium heat until cooked, about 15-18 minutes.
- Set aside.
Tzatziki Sauce
- First, add yogurt, lemon juice, pressed garlic, lemon zest, dill weed, salt and pepper to a bowl and mix.
- Then, add grated cucumber to the yogurt blend, stir and set aside.
Easy Chicken Gyro With Eggplant
- First, warm the pita in the oven for a few minutes at 350.
- Next, layer the pita with eggplant (or not), chicken, chopped tomatoes, sliced red onions, parsley, tzatziki sauce, and crumbled feta cheese....Fabulously Tasty...Enjoy!!!
