Fall Off Friday With Bourbon Chicken Enchilada Chili

Happy Friday All! If you have been following my recipes and/or blog, This is My Enchilada Chicken Chili only, but Jazzed Up a bit with a flavorful and unique NEW taste!!! Fall Off Friday With Bourbon Chicken Enchilada Chili is a Quick & Easy recipe….Rotisserie Chicken, Bourbon, Goat Cheese, Enchilada sauce, and Spicy Jalapenos and more….OMG, so Good…..Cheers to a Happy and Healthy Weekend!

Instructions

  1. First, add olive oil then the onion, garlic, jalapenos to your pot and sauté for 5 minutes until transparent and tender.
  2. Next, add water to the pot, bouillon cubes and/or paste, fresh lemon juice, lemon zest, and your pulled apart chicken.
  3. Then add all of your seasonings, cilantro, corn, beans, enchilada sauce, bourbon, and goat cheese and cook for 1.5-2 hours stirring regularly and serve with a glass of Bourbon or a Good IPA Beer...Enjoy!!!
