Instant Pot Spicy Mexican Jambalaya

Ingredients

  • 2 Tablespoons Felippo Berio Olive Oil Olive oil helps decrease the total cholesterol and "bad" LDL cholesterol levels.
  • 3 Cloves Chopped Garlic Garlic can lower total and LDL cholesterol. For those with high cholesterol, garlic supplements appear to reduce total and/or LDL cholesterol by about 10–15%

  • 1 Teaspoon Cumin
  • 1 Teaspoon Coriander Studies have shown that by incorporating coriander into your diet you can decrease your levels of bad cholesterol. So you're looking to lower cholesterol overall and balance LDL to HDL cholesterol, this spice may help do the trick.
  • 1 Teaspoon Garlic salt

  • 1 Cup Habanero Pineapple Salsa

  • 1 Cup Jasmine Rice
  • 1 Cup Red Lentils Brown, green, yellow, red or black — lentils are low in calories, rich in iron and folate and an excellent source of protein. They pack health-promoting polyphenols and may reduce several heart disease risk factors.
  • 3 Cups Water
  • 4 Links Chicken Andouille Sausage
  • Dollup Low Fat Sour Cream

Instructions

  1. First, turn on your instant pot to sauté or sear and wait a minute or two to warm.
  2. Then, add your olive oil, garlic, onion, and ginger and stir. Next, add coriander, garlic salt, cumin, and Cajun seasoning and stir.
  3. Next, add your salsa and stir to coat. Then add your serrano and bell peppers, stir.
  4. Then, you will add your jasmine rice and stir. Then add your lentils, blend and add your water. Next add your chicken sausage and stir.
  5. Finally, add your custom timer to 20 minutes and close and lock the lid. You will need for it to cool and switch to warm before you open it. Serve with slices of avocado and a dollop of sour cream.....So Delicious and Healthy....Enjoy!!!
