Sicilian Meatballs & Baked Garlic Cauliflower
Ingredients
Sicilian Meatballs
- 2 Lbs. 1 Lb. Organic Ground Chicken and 1 Lb. of Organic Ground Turkey
- 1/2 Cup Dried Parsely or Fresh Flat leaf Parsely is very high in Vitamin B, which provides folate which is needed to maintain healthy heart.
- 1 Teaspoon Garlic Powder or 2 Cloves Fresh Pressed Garlic Garlic offers a variety of benefits, from cardiovascular protection, and lowering LDL levels along with triglycerides and lowering blood pressure.
- 1/4 Cup Raw Oats Oats and oatmeal have many health benefits. These include weight loss, lower blood sugar levels and a reduced risk of heart disease.
- 2 Tablespoons Dried Oregano or Fresh Oregano treats inflammation in the body.
- 1-2 Teaspoons Sea Salt or Garlic Salt
- 1/4 Cup Italian Bread Crumbs
- 1/2 Cup Craisins/Raisins Whichever you prefer or use both as I did.
- 3 Tablespoons Grated Italian Cheese
- 10-15 Grinds Fresh Ground Pepper

Baked Garlic Cauliflower
- 1 Head Cauliflower Cauliflower is high in fiber and can significantly lower your bad cholesterol, LDL
- 5-6 Cloves garlic Garlic offers a variety of benefits, from cardiovascular protection, and lowering LDL levels along with triglycerides and lowering blood pressure.
- 1 Dash Sea Salt
- 2-3 Grinds Fresh Ground Pepper
- 2 Tablespoons olive oil Olive oil is an excellent fat that helps lower bad cholesterol, LDL's
- 1/2 Cup Low Fat Mozzarella Cheese http://www.kraft. com
- 1 Tablespoon Cajun Blend Basin Blend http://www.basinblend.com or red pepper flakes
- 1/2 Leek Bulb Onion is high in vitamins and minerals and antioxidants and some benefits may include reducing the risk of heart disease.
- 1 Teaspoon Grated Italian Cheese
- 1 Teaspoon Dried or Fresh Oregano Oregano treats inflammation in the body.
Instructions
Sicilian Meatballs
- First, in a bowl, add meat, eggs,parsley, oregano, garlic powder,salt, pepper, Italian grated cheese, and bread crumbs, flaxseed meal and oats, mix thoroughly.
- Add, raisins/craisins.
- Next, add Olive Oil to a skillet, grab meat mixture and roll meatballs the size of a golf ball or slightly larger.
- Then, cook over medium heat, flipping as it browns on one side, flip to the other. Cook approximately 15-20 minutes, set aside.
Baked Garlic Cauliflower
- Preheat Oven to 375.
- Next, take garlic and leek and put it in foil with teaspoon of olive oil and dash of salt and pepper and cover completely.
- Then, bake for 35-45 minutes until soft.
- While that is baking, steam the cauliflower on the stove until tender or microwave for 7-10 minutes with slight layer of water at the bottom of a corning ware bowl or dish.
- Then, remove garlic leek blend from the oven smash with a fork and stir, add Cajun blend Basin Blend Spice or pepper flakes to the mix, Italian grated cheese, and fresh oregano.
- Next, take a butter knife and make 5-7 slices into the cauliflower head.
- Then, take the mix and rub it into the holes of the cauliflower and all over the surface of the cauliflower. Add a dash of salt and pepper.
- Bake for 10 minutes on the middle rack.
- Remove from oven and add shredded mozzarella and bake for an additional 10.
- Pairs beautifully with the Sicilian meatballs....Enjoy!!!
