Instructions
Enchilada Chicken Stew
First, in a pot add your enchilada sauce, sliced chicken breast, chopped shallots, garlic, cilantro, tomatillos, and all chopped peppers together and cook on a medium to low heat, stirring often.
Once the chicken is cooked through and the veggies have softened, turn it off and cool for 15-20 minutes and Preheat the oven to 350.
Making and Baking the Chicken Enchiladas
First, you will need a greased 9×13 baking pan. Next, use a slotted spoon to get the chicken and veggie blend out of the enchilada sauce. You will then put the chicken and veggies into the tortilla, sprinkle some cheese, add a couple slices of jalapenos, and ROLL.
After you have finished rolling all of your enchiladas, use a spoon to lightly drizzle the enchilada sauce over your tortillas, sprinkle more cheese on top, and add some jalapenos.
Bake 5-10 minutes until the cheese is melted, add sour cream and avocado to your serving and you have a Beautifully Healthy and Delicious Chicken Enchilada Meal….Enjoy!!!
