Lemon Berry Doughnuts, Bundt, & Cupcakes?

Happy Friday All….I asked my 3 children what treat they would like after school today and 1 said cupcakes, 1 said doughnuts, and 1 said cake?? I am certain you all can relate. Since I have all 3 different pans, I decided to humor them. These Lemon Berry Doughnuts, Bundt, and Cupcakes are delicious! Anytime you add fresh berries to a dessert and your children will eat them, it is a win!! Cheers and have a safe and Happy Weekend All!!!

Ingredients

  • 1 Box Betty Crocker Lemon Cake
  • 1 Cup Fresh Mixed Berries Blackberries have the highest LDL inhibitory effect, followed by red raspberries, sweet cherries, blueberries and strawberries, according to Edwin Frankel, Ph.D., of the University of California at Davis where the research was done.
  • 3 Organic Brown Eggs
  • 1/2 Cup Smart Balance Cholesterol Free Oil The Omega-6s are also important to heart health, having been shown to decrease total and LDL (bad) cholesterol.
  • 1 Cup Water
  • 2 Tablespoons Whole Wheat Flour
  • 1 Teaspoon Flaxseed Meal Flaxseed contains Omega-3 fatty acids. This type of fat can help lower your triglycerides and reduce inflammation, both important in maintaining a healthy heart.

Instructions

Cake
  1. First, Preheat the oven to 350. Next, add you mix, oil, eggs, water and mix.
  2. Next, add you flour, flax, and berries and coat.
  3. Then fold in berries and immediately pour into any pan you wish and bake 12-15 minutes.
Frosting
  1. First, add your cream cheese, vanilla, milk, powdered sugar, and honey and use a handmixer and frost.
  2. Lastly, let your cakes cool before frosting and garnish with fresh berries...Enjoy!!!
