  • 2.5-3Cups Canned or Frozen CornCorn and popcorn are both considered whole grains, which means they’re high in fiber that can help lower your cholesterol, according to the American Heart Association.

  • 4.5Cups Low Fat Milk
  • 10-12Large Shrimp
  • 1 Bay LeafBay leaves, contain rutin and it helps strengthens capillary walls in the heart and the body’s extremities, while caffeic acid, which is in bay leaves, can help eliminate LDL or bad cholesterol from the cardiovascular system.
Instructions
  1. Chop all veggies finely, except cube the sweet potatoes, set aside. Rinse the corn and set that aside.
  2. Next, add olive oil, garlic, leek, fennel, and orange or red peppers to medium size pot and saute until transparent.
  3. Then, add salt and pepper.
  4. Next, add corn, milk, and bay leaf. Then, bring to soft boil.
  5. Add thyme, cumin, and if you like spice, cayenne (OPTIONAL) and a dash more of salt.
  6. Next, Simmer for 30-45 minutes with a half covered lid, stirring every 5-10 minutes.
  7. Then, add sweet potatoes, black beans, and cilantro. Cook an additional 30-40 minutes.
  8. Finally, add cooked shrimp to the pot and simmer another 5 minutes, remove and discard the bay leaf, and serve.

Recipe Notes

If you would like to add slightly more milk as it cooks down, feel free to do so.  Also, add salt and pepper to your liking.
