Tasty Chicken & Veggie Enchiladas

What’s for dinner tonight?? Well I made this last night, but it makes for a perfect weeknight meal for you and your family. This recipe is a Simple, Easy, and Uniquely Delicious…..Tasty Chicken and Veggie Enchiladas is a perfect comfort meal with along with Awesome Heart Healthy benefits.  The Veggies, when stewed, are a perfect blend to the chicken, enchilada sauce, and tortillas….Enjoy!!!

Healthy Chicken Enchiladas Yum

Cooking the Enchilada Chicken Stew
  • 2 Packages Frontera Red Chile Enchilada Sauce
  • 1.5 Lbs. Organic Chicken Breast Sliced thin.
  • 1 Large Chopped Shallot Onion is high in vitamins, minerals, and antioxidants. Some benefits may include reducing the risk of heart disease.
  • 4 Cloves Sliced or pressed Garlic Garlic offers a variety of benefits, from cardiovascular protection, and lowering LDL levels along with triglycerides and lowering blood pressure.
  • 1/2 Freshly Chopped Jalapeno Jalapenos have capsaicin, which has a variety of health benefits, but some studies are showing that Capsaicin can lower cholesterol levels.
  • 3-4 Sliced or Chopped Tomatillos Tomatillos contain potassium, a mineral that serves as a natural vasodilator. Potassium dilates blood vessels and reduces the pressure on the cardiovascular system. Tomatillos are rich in dietary fiber that helps regulate LDL or bad cholesterol levels.
  • 1/2 Chopped Red Pepper Red Bell Peppers are full of lycopene which and also a source of cholesterol-soluble fiber and powerful antioxidants that are great for heart health

Instructions
Enchilada Chicken Stew
  1. First, in a pot add your enchilada sauce, sliced chicken breast, chopped shallots, garlic, cilantro, tomatillos, and all chopped peppers together and cook on a medium to low heat, stirring often.
  2. Once the chicken is cooked through and the veggies have softened, turn it off and cool for 15-20 minutes and Preheat the oven to 350.
Making and Baking the Chicken Enchiladas
  1. First, you will need a greased 9x13 baking pan. Next, use a slotted spoon to get the chicken and veggie blend out of the enchilada sauce. You will then put the chicken and veggies into the tortilla, sprinkle some cheese, add a couple slices of jalapenos, and ROLL.
  2. After you have finished rolling all of your enchiladas, use a spoon to lightly drizzle the enchilada sauce over your tortillas, sprinkle more cheese on top, and add some jalapenos.
  3. Bake 5-10 minutes until the cheese is melted, add sour cream and avocado to your serving and you have a Beautifully Healthy and Delicious Chicken Enchilada Meal....Enjoy!!!
