Fall Off (the wagon) Fridays with a Slow Cooker Chicago Style Reuben is one of my most favorite sandwiches.  On any given Friday or Saturday “late night”, this was my twenty-something food of choice(then came kids).  It is so quick and easy to make and  a perfect meal to go along with this Sunday Nights Bears game! Pair it with my favorite beer, LAGUNITAS, Little Sumpin’ Sumpin’, Ale, Yummy!!!! Cheers to a Happy, Healthy, and Safe Weekend….Enjoy!!!

Slow Cooked Corned Beef
  • 3.5 Lb. Seasoned Corned Beef
  • 1 Cup Laguinitas IPA or whatever beer you have
  • 5 Long Carrots Carrots' orange hue comes from beta-carotene, a compound that serves as a source of heart-healthy vitamin A. Getting enough vitamin A helps fight heart disease, according to a review published in "Heart and Circulatory Physiology" in 2008
  • 2 Bay Leaves Bay leaves, contain rutin and it helps strengthens capillary walls in the heart and the body’s extremities, while caffeic acid, which is in bay leaves, can help eliminate LDL or bad cholesterol from the cardiovascular system.
  • 3 Cloves of Garlic Garlic offers a variety of benefits, from cardiovascular protection, lowering LDL levels, and triglycerides.
  • 1 Medium Onion Onion is high in vitamins, minerals, and antioxidants. Some benefits may include reducing the risk of heart disease.
  • 2 Tablespoons Felippo Berio Olive Oil Olive oil helps decrease the total cholesterol and "bad" LDL cholesterol levels

Instructions
Slow Cooked Corned Beef
  1. First, add your beer, olive oil, seasoned corned beef, whole cloves of garlic, sliced onion, whole carrots, and bay leaves to your crock pot and cook on high for 4-6 hours or low, 8-10.
  2. Once cooked, remove and cool the corned beef.
Making your Reuben Sandwich
  1. While the corned beef is cooling, preheat the oven to 375.
  2. Then, slice your bread and drizzle olive oil and bake for 3 minutes or until the bread starts to lightly toast, then remove it from the oven.
  3. From the bottom, layering up, add corned beef, sauerkraut, cooked onion(from the slow cooker), hot or mild giardiniera, and top with Swiss cheese and bake for 5 minutes. Remove and add Thousand Island dressing and slice your slow cooked carrots and add to the top and serve....Enjoy it with my favorite beer, Laguinitas Lil Sumpin Sumpin...Cheers to the Weekend All!!!
