Tzatziki Sauce
- 1 Cup Greek Yogurt
- 1/2 Peeled Seedless Cucumber Cucumbers are a good sources of fiber and also great for the skin.
- 2 Cloves Garlic, pressed or diced small Garlic offers a variety of benefits, from cardiovascular protection, and lowering LDL levels along with triglycerides and lowering blood pressure.
- 1 Teaspoon Dill Weed Fresh or Dried
- 1-2 Dashes Sea Salt or Garlic Salt

- 1/4 Teaspoon Lemon Zest
Jasmine Rice
- 2 Cups Rice Any White or Brown Rice is fine
Corn
- 2 Cups Corn Frozen or Canned
Flatbread
- 4-8 Mini Flatbreads/Naan Bread You can buy the large Naan breads also and cut into pieces.
Tomatoes and Avocado
- 1-2 Large Plum tomatoes Tomatoes- studies have discovered that high levels of lycopene in the blood are associated with a lower risk of cardiovascular disease in both men and women.
- 1 Avocado Eating Avocados Can Lower Cholesterol and Triglyceride Levels.

Instructions
Mediterranean Chicken
- Preheat the oven to 375.
- Next, season the chicken and add garlic and olive oil in a cast iron pan, turn it to medium heat. (If you prefer, you can use a skillet, brown,and cook until tender browned and cooked through)
- Next, add chicken breasts and sear on each side, 3-4 minutes per side.
- Cut the lemon in wedges and use the juice of 3-4 and add lemon zest also if you would like.
- Then, bake in the oven for 30 minutes or until cooked through.
- Finally, slice however you like and cover.
Tzatziki Sauce
- First add Greek Yogurt to a bowl.
- Next, add chopped cucumber and garlic to the yogurt and stir.
- Then, add juice from lemon and zest.
- Finally, add dill weed and salt, stir.
Jasmine Rice
- Cook as directed.
Corn
- Cook as directed, either frozen or canned is fine. I prefer frozen.
Ancient Grain Naan Bread
- Toast for 3-4 minutes at 325.
Mediterranean Chicken and Rice Flatbread
- First layer the cooked rice on top of the flatbread.
- Then, add slices of tomatoes.
- Next, add chicken.
- Then, add 2-3 dollops of Tzatziki sauce to top.
- Sprinkle corn to your liking on top of that.
- Add avocado slices and parsley to garnish. Enjoy!
