First, preheat the oven to 350 and grease a 9×13 Pyrex, either with olive oil or cooking spray, slice your tomato, and rinse your spinach.
Then, crack an egg into a bowl and add a tsp. of water and whisk. In a separate bowl add your bread crumbs and flaxseed meal.
Next, you dip your chicken breasts into the egg and flip it so both sides are coated.
Then, dip the chicken into the bread crumbs and coat both sides, move to Pyrex pan then add shaved Parmesan to each piece of chicken, drizzle olive oil over each breast and bake for 40 minutes.
While that is cooking, boil the water for the pasta and warm up your sauce in a pot.
Then when the pasta is finished (about 7 minutes), strain, add to a bowl, and add your sauce and some grated cheese, set aside.
After the 40 minutes, take the chicken out of the oven, add your slices of tomatoes, spinach, and top with a thin slice of provolone and bake for an additional 5-7 minutes.
When the cheese is melted, remove from the oven and serve with your side of pasta…..Scrumptious….Enjoy!!!
