Ingredients
- 2 Tablespoons Felippo Berio Olive Oil Olive oil helps decrease the total cholesterol and "bad" LDL cholesterol levels
- 4-5 Cloves Chopped Garlic Garlic offers a variety of benefits, from cardiovascular protection, and lowering LDL levels, triglycerides, and lowering blood pressure.
- 1 Medium White Onion, Chopped Onion is high in vitamins and minerals and antioxidants and some benefits may include reducing the risk of heart disease.
- 2 Fresh Jalapenos, chopped Jalapenos has capsaicin, which has a variety of health benefits, but some studies are showing that Capsaicin can lower cholesterol levels.
- 5 Cups Water
- 4 Wylers Chicken Bouillon Cubes
- 1 Tablespoon Better than Bouillon Vegetable Paste
- 1 Whole Rotisserie Chicken, meat only
- 1 Whole Lemon and The Zest Research has shown that eating fruits and vegetables rich in vitamin C reduces the risk of heart disease and stroke.
- 1 Cup Fresh Cilantro Cilantro helps lower cholesterol, lower blood pressure, supports healthy cardiovascular function.
- 3 Oz.'s Goat Cheese
- 2 Cans Cannellini Beans/Rinsed and Strained Beans are high in fiber and may lower your LDL's, bad cholesterol.
- 1 Can Black Beans/Rinsed and Strained
- 1 Tablespoon Lemon Pepper Seasoning http://www.Basinblend.com or Mrs. Dash
- 2-3 Tablespoons Cajun Blend Basin Blend or Fiesta Lime Mrs. Dash Seasoning NO Sodium seasonins either http://www.basinblend.com or another no sodium cajun blend seasoning
- 2 Cups Frozen Corn Corn and popcorn are both considered whole grains, which means they're high in fiber that can help lower your cholesterol, according to the American Heart Association.
- 1/2-3/4 Cup Bourbon Any brand will do
- 3/4's Can Red Enchilada Sauce
- 3-4 Dashes Sea Salt

Instructions
- First, add olive oil then the onion, garlic, jalapenos to your pot and sauté for 5 minutes until transparent and tender.
- Next, add water to the pot, bouillon cubes and/or paste, fresh lemon juice, lemon zest, and your pulled apart chicken.
- Then add all of your seasonings, cilantro, corn, beans, enchilada sauce, bourbon, and goat cheese and cook for 1.5-2 hours stirring regularly and serve with a glass of Bourbon or a Good IPA Beer...Enjoy!!!
