Healthy Tacos and Cilantro Lime Rice

What’s for dinner tomorrow night? These Quick and Hearty Turkey Tacos will be a hit for sure…The meat is sauteed with garlic, onion, add the right amount of sauce then top with crunchy slaw, dab of Queso fresco, and Serrano peppers for just the right amount of spice, and avocado. I made a quick cilantro lime rice that paired beautifully with the tacos….WOW, these really turned out delicious…Happy Almost Taco Tuesday!!!

Cilantro Lime Rice
Instructions
Tacos
  1. First, add your olive oil to a skillet and add your garlic and green onions and saute. Next, add your turkey ground meat and brown, then add your Frontera taco seasoning sauce.
  2. Warm your tortillas on stove top over a medium low heat to warm and toast then layer your tacos.
  3. From the bottom up, add meat, queso fresco cheese, chopped purple cabbage, slices of avocado, chopped serrano, and fresh lime juice.
Cilantro Lime Rice
  1. First, add your 3 cups of water to a pot and boil. Next add your rice and simmer 15-20 minutes. Turn off the stove and add your cilantro, salt, mexican oregano, and lime juice, stir and cover and set aside.
Chips/Salsa/Jarred Jalapenos
  1. Tortilla chips, Pineapple Habanero Salsa, and pickled jalapenos for quick nachos side dish.
