Creamy Potato, Fennel, & Chicken Soup With Homemade Croutons

If you love Roasted Potatoes with Herbs & Chicken, you will love this Creamy and Healthy Soup. If you have never tried fennel before it looks like the base of celery, but has a sweet, anise like flavor when eaten raw. When Fennel is cooked, it does not make food taste like licorice, but adds a light glowing spring-like caliber to foods.

I decided to add some crunch to the hearty soup by adding some simple homemade croutons and then devoured the whole bowl…This Creamy Roasted Potato, Fennel, & Chicken Soup with Homemade Multigrain Croutons was Delightful, Hearty, and has So Much Flavor….Enjoy!!!

Chicken & Roasting Veggies
  • 3 Lb. Small potatoes, Boomer Gold and Blushing Bell Red Potatoes mixed The Little Potato Company Brand- these were small red and gold potatoes. Potatoes are rich in potassium, which can help lower blood pressure. And they're high in fiber, which can lower the risk for heart disease.
  • 1 Leek Onion are high in vitamins, minerals, and antioxidants. Some benefits may include reducing the risk of heart disease.
  • 1 Fennel Bulb The fiber, potassium, folate, vitamin C, vitamin B-6, and phytonutrient content in fennel, coupled with its lack of cholesterol, all support heart health. Fennel contains significant amounts of fiber. Fiber decreases the risk of heart disease as it helps reduce the total amount of cholesterol in the blood.
  • 6 Cloves of Garlic Garlic offers a variety of benefits, from cardiovascular protection and also lowering LDL levels, triglycerides and lowering blood pressure.
  • 2 Sprigs Fresh Rosemary
  • 10 Springs Fresh Thyme A study found that an extract was able to significantly reduce heart rate in rats with high blood pressure, and it was also able to lower their cholesterol.

Instructions
Roasting Veggies
  1. Preheat the oven to 375. Rinse all veggies and ONLY chop the fennel and leek into smaller chunks.
  2. Next in a roasting pan add potatoes, leek, fennel, garlic, shallots, rosemary, thyme, and 2-3 tablespoons of olive oil and cover and bake for 1 hour. (You can remove the rosemary and thyme leaves from the sprigs before or after they are baked.)
  3. Then, uncover and let cool for 10-15 minutes and in the mean time BAKE your croutons.
Making Croutons
  1. Add butter into a microwavable bowl and melt. Then, slice 4-5 pieces of Multigrain bread into chunks and dip them into butter and then put them on a greased cookie sheet and dash garlic salt on them.
  2. Bake at 375 for 12 minutes.
Making the Soup
  1. First, add olive oil and sliced chicken to the pot and lightly saute. Then add a 1.5 cups of broth and reduce to simmer.
  2. Next, take half of your roasted veggies and add them into a blender or food processor. Add 1 cup of chicken broth and blend. When finished, it will be thick, use a spatula to remove and add to your pot. Repeat this EXACT step again with the other half of the veggies.
  3. Once all roasted veggies have been blended and added to the pot of broth and chicken, add your milk, sour cream, cheese, salt, and pepper and stir.
  4. Continue to cook over a low heat for 20-30 minutes stirring regularly. Remove from the heat and serve with the delicious homemade croutons....this soup is Hearty, Healthy and absolutely Delicious....Enjoy!!!
